LEMON SNOW CAKE 2 layers of Rich White Cake Lemon Filling lVz cups moist shredded cocoanut (14 lb. can) Spread chilled Lemon Filling over tops of cooled layers of cake (1 cup filling on each). Let stand until filling is set. Place layers together to make a 2-layer cake. Spread filling as thickly as possible on sides of cake. Sprinkle shredded cocoanut generously over sides and around top edge of cake to make a 1-inch rim — leaving shiny yellow filling showing in the center. RICH WHITE CAKE % cup shortening (V2 butter for flavor) IV2 cups sugar 2V4 cups SIFTED cake flour or 2 cups SIFTED all-purpose flour Yi tsp. salt 3 tsp. baking powder % cup thin milk (or half milk and half water) % tsp. flavoring (almond and vanilla mixed) 4 egg whites Cream butter, add sugar gradually and cream thoroughly. Sift flour, salt and baking powder together and add to creamed mixture alternately with the milk.
