However, and as current discussion has centered around popcorn storage, it would be well to review that subject and the factors affecting popcorn expansion.
“First of all, let us assume that when a shipment of popcorn reaches your store or plant it is at the correct moisture content and in good popping condition. It is only natural that you make an expansion test when the corn arrives, but how often do you make a similar test? Do you test it regularly before bringing it to the popper, do you condition it if necessary, or do you pop out a hundred pounds or more and then discover that the corn is not popping as well as it did when you received it? If this is the case, and unless you don’t mind losing a lot of money, it is about time you started to do something about it.
