SCHAUM TORTE 12 egg whites; V* t. salt; 3 A t. cream of tartar; 2Vi c. very fine sugar; 1 T. vinegar; 1 pint heavy cream sweet¬ ened and whipped; Maraschino cher¬ ries or sweetened fruit, cocktail cher¬ ries & maraschino cherry flowers. Beat egg whites and salt until foamy. Add cream of tartar, beat until eggs hold stiff peak. Add sugar by table¬ spoons, folding in carefully each addi¬ tion. Test by rubbing between fingers. Mixture should be marshmallowy with no sugar granules. Add vinegar slowly. Grease 9-by-3-inch removable rim pan with melted lard. Line bottom with part of meringue, use back of a spoon to work some up sides to make a lining. Pour remaining meringue quickly into pan. Bake in slow (275 degree F.) oven until delicately brown, about VA hours. Turn off heat and allow torte to dry out in oven (door closed) for another hour. Cool, then remove rim of pan. Slice off top, spread torte with whipped cream, and fruit. Replace top, frost with whipped cream, decorate with fruit. Yields 15 to 16 servings. 20
